Porcine Inspiration



Admittedly I live in a town obsessed with bacon. You would be hard pressed to find a sandwich spot (other than the vegetarian/vegan offerings) that do not entice with several options for porky indulgence. This phenomenon is not unique to Portland, OR alone, tho' I do believe we are some of the most enthusiastic consumers of 'The Other White Meat'. With this in mind, please consider adding some Pink Slip Jam chutney into your sandwich ideas or for a pork loin, pork roast, or some luscious chops. The Gospel of Bacon (thank you, Berlin Reed!) used several PSJ flavors in a variety of cures for his house-made bacon-of-the-month club offering awhile back...I especially like the Peach Pistachio Chutney & the Rhubarb & Mustard Seed Chutney to add even more dimension to my gateway meat choice! Thinking down the road to a time where cooler temperatures occur, I might also like to suggest that the Meyer Lemon & Vanilla Jam makes a mighty fine marinade or glaze for bacon done in the oven or on a grill. It just adds a little something extra & is quite different than your Mom's applesauce (not that there's anything wrong with that!). Try some!
