Feliz Cinco de Mayo!


Hola! Well after all the silliness of yesterday (May the Fourth be with you...sheesh!), today marks not only Cinco de Mayo, 2 friends' birthdays, AND a Full Moon that is supposed to be a 'Super' Moon with something like 14% more brightness (according to the LA Times article). I am not sure what this Full Moon means as I have not delved deeply into the astrological portents. I've been busy making a Tres Leches Cake for a birthday party and I think it will be muy bueno. If you are not familiar with this fabulously luxurious dessert, do yourselves a favor & look it up! As the name would imply, it has 3 different types of milk steeped into a rich yellow cake. I made mine with duck eggs because I have ducks who are laying eggs like nobody's business! The milks I used were evaporated milk, sweetened condensed milk, & Half & half. Some recipes call for cajeta, which is a caramelized full fat goats' milk. I would have attempted this but time was of the essence (and I do not have a goat!). Here is the basic scoop:

Make the cake...CHECK!
Let it cool......... CHECK!
Poke holes in cake....DONE!
Make Glaze       CHECK!
Pour glaze over cake.DONE!
Pop into fridge....CHECK!
Next day....Make a whipped cream topping, slather onto the cake, stick back into the fridge till it's Party Time!

Whack pinata with abandon! Drink Margaritas! Have BIG FUN!
